We are not professional chefs, so all of our recipes are simple! These are things we eat weekly in our house! As always, you don’t need a “recipe” for microgreens – just add them to everything! But if you are looking for ideas, then this is a good start!

Avocado Toast with Micro Sandwich Blend
- 1 Avocado
- 1/4 tsp lemon juice
- salt to taste
- 2 slices bread
- 1/4 cup Sandwich Blend or Mighty Mix
Mash avocado and add lemon juice and salt.
Spread avocado mix onto bread. If desired, finely chop microgreens. Top avocado mix with microgreens.
Nutrient Boost Microgreen Spaghetti Sauce
- 1 24oz jar Spaghetti Sauce
- 1/2 box (approx 3/4 cup) of Mighty Mix
- 1 16oz box of spaghetti
Cook sauce and pasta as usual. While those are cooking, finely chop the Mighty Mix and set aside. When sauce and pasta are ready, remove sauce from heat and stir in the chopped Mighty Mix.
(This is an easy and kid-friendly way to add in some additional veggies into dinner! The Mighty Mix blends right in with the other flavors in the sauce and is almost undetectable.)


Super Easy Microgreen Smoothie Packs
- 1 /2 banana
- 4 strawberries
- 6 blueberries
- 1/4 cup butternut squash
- 1/4 avocado
- 1/2 cup Sunflower Shoots
- 1/4 cup Mighty mix
(Or use 3/4 cup of any of our Salad Boxes) - 1 cup milk or yogurt
- 1 cup orange juice
Place all ingredients except milk/yogurt/juice into a freezer safe container and put in freezer. When you are ready for a smoothie, pull the “smoothie pack” out and pop all the frozen ingredients into your blender. Add milk/yogurt/juice and blend!
Our Family Favorite Chicken & Rice Casserole
- 3 cups rice
- 2 cups chicken, cooked and cubed
- 2 cups shredded cheese
- 1 can cream of chicken soup
- 1 cup Mighty Mix, chopped
- Salt & Pepper to taste
Cook rice according to package. While that is cooking, cube chicken and finely chop Mighty Mix. Preheat oven to 350. Oil 9×13 casserole dish. Pour cooked rice into pan then mix in cream of chicken soup. Add chicken, cheese, microgreens and salt and pepper. Mix together. Bake for 20minutes.
This is a kid-favorite!
The microgreens blend perfectly into this casserole dish for a big nutrient boost! Try adding other veggies too, like sweet potato, onions or zucchini!


Tuna Sandwich With Micro Radish
- 1 – 5oz can tuna
- 2 tbsp mayo
- 1 tsp mustard (regular or Dijon)
- 2 tbsp raisins
- 1/2 cup Micro Radish
- 1/4 tsp onion powder
- salt & pepper to taste
- 2 slices whole wheat bread or 2 tortillas
Mix all ingredients together, finely chopping the microgreens if you prefer. Spread on bread, tortillas or even add to lettuce for a salad.
Mix it up! Try these swaps:
Tuna = Chicken or (cooked) Chickpeas
Mayo = Greek Yogurt
Raisins = Celery, Apples or Cranberries
Micro Radish = Mighty Mix or Sandwich Blend
